On July, 4th of 2007, I discovered that local Hispanics often put lime juice on their food. Concession stands would sell small tacos with nothing but seasoned meat, chopped cilantro, and a slice of lime, which you would sqeeze onto the taco. It was that day that I developed a love of lime juice.
In late June of 2008, I was looking for something new to try. In this case, I was trying to see what I could do with a salad made with frozen broccoli and canned kidney beans.
Cilantro and lime juice happened to be something I had on hand, and so I went from there...
Lime-Cilantro Salad
Mix the chopped ingredients, season with the spices (don't overdo it) and add the lime juice, and add enough mayonnaise to coat the vegetables. (It would probably taste just fine without the mayonnaise, if it's not your thing.)
